There are a wide variety of soups made and yet the most popular in my opinion is caldo verde.

Caldo verde with chouriço

Caldo verde is a traditional Portuguese soup that is made for any occasion. Growing up we would eat this soup every week at my grandparents’ houses, weddings, and other Portuguese functions. It was typically served as the first course of any meal or alone with some Portuguese buns. It is hands down my favourite soup!

Caldo verde directly translates to green broth, but the consistency is more of a soup. The soup contains a potato puree, onions, garlic, collard greens, with slivers of Portuguese sausage (chouriço). It can easily be made into a vegetarian dish by not including the sausage and if you or someone in the family does not care for collard greens then it can be easily swapped with kale or spinach.1 This soup is so versatile, inexpensive, and super easy to make.

The soup originates in the Minho region, in the north of Portugal, however it is described by majority of Portuguese as the unofficial national dish of Portugal.2 It is served in high-end restaurants as well as common home kitchens.3 It is such a classic that it is loved throughout the country and abroad like here locally in Vancouver.

McDonalds menu in Portugal- Soup options in the top left

However, one aspect that is not in Vancouver is the option to have it as a side with your McDonalds burger. You heard me right! In Portugal, you can have soup as your side instead of fries. Soup in general is so popular in Portugal that McDonalds caries four varieties of soup, with one being caldo verde.4 While visiting family in Portugal back in 2011, I got to experience having McDonalds signature chicken McNuggets and caldo verde soup on the side. It was amazing and very different. I was surprised by the quality of the soup as it is McDonalds, yet it tasted just like my grandmothers.

If soup is your comfort food and passion like it is mine, then making this delicious soup will be perfect for you. If you give it a try, you won’t regret it!

Recipe:
2 L (8 cups) chicken stock
10 ml (2 tsp) fine salt
50 ml (1/4 cup) olive oil
3 cloves garlic, minced.
2 large onions, quartered.
750 g (1 1/2 lb) potatoes, peeled and halved (about 4)
250 g (8 oz) chouriço.
1 L (4 cups) water
500 ml (2 cups) finely shredded collard greens

Procedure:
In a large saucepan, combine chicken stock, 5 ml (1 tsp) of the salt, 30 ml (2 tbsp) of the oil, garlic, onions, potatoes and chouriço, and bring to a boil over medium-high heat.
Reduce heat to medium and cook for 35 to 40 minutes until potatoes are tender when pierced with fork.
In a separate saucepan over medium heat, combine water, remaining 5 ml (1 tsp) salt and collard greens. Bring to a boil and simmer for 5 to 7 minutes, until bright green and tender. Drain greens and transfer to a large serving bowl. Set aside and cover to keep warm.
When potato mixture is cooked, use a slotted spoon to remove chouriço; slice it thinly and set aside. Transfer potato mixture to a food processor or blender and puree in batches until smooth. Pour puree over prepared collard greens and stir well to combine. Taste and adjust seasonings with salt, if necessary.
To serve, ladle soup into bowls and garnish each serving with a few slivers of chouriço and about 5 ml (1 tsp) olive oil drizzled over top.
Makes 8 to 10 servings.5

Endnotes:

1.
